When the vehicle is in motion, side window visors allow you to roll down the windows a few inches and draw in fresh air without creating turbulence in the cabin. The aerodynamic shape also keeps dust and rain outside.

When the vehicle is parked in the hot sun, you can leave the windows down an inch or two for ventilation, without worrying about rain (or curious hands) getting in.
